the chicken is actually steamed first
then the seasoning is basted on while on the grill imho the sauce they use is different to what you buy and the sauce in the bottles at the restaurant is also different to what you buy |

The only problem with the chicken steak is it's too small/expensive, you are better off getting a 1/2 chicken instead and removing the bones.
