So the missus made me some protien pancakes for breakfast yesterday.
And, I, well, loved the thought and effort.... She put in: 200g wholemeal self raising flour, 100g almond meal, 100g oats, 6 eggs, 6 scoops wpc, 1g stieva. Now while I do appreciate the effort, they werent that great. They were really hard - dence - dry things. Any suggestions or lulz? I just want a pan cake thats fluffy and yum .

Simple and delicious:
1 cup of WPC 1/2 cup of Water 1 egg 1/4 tsp of baking soda 1/4 tsp of vanilla essence Add the water gradually until the consistency is just right. I find just under a half a cup is what's required. Blend the whole lot until smooth. Wipe virgin olive oil on the fry pan before use to get a nice non-stick surface. Cook on a low heat, turn, cook some more, enjoy. I like to add fresh fruit and natural yoghurt on top and eat this as my Saturday breakfast. Makes two large pancakes. ![]() Enjoy! Cheers, Mike

Just tried MikeW's recipe and sorry to say that they were terrible. Just the texture is sooo dry & hard to eat, like most times I've tried to make protein pancakes. Lucky I only made half a batch =)

My personal favourite:
1 scoop vanilla protein 1 cup oats 1/2 cup egg whites 1/2 cup water 1/2tsp baking powder dash cinnamon banana blend and fry top with organic PB i even add a cup or 2 of spinach for my greens and you have a perfectly balanced meal. you can't taste it but it does turn your pancake bright green haha |
