I know this salad is very basic but I have limited time for lunch at work and I can knock this together in aout 3 mins.
1 large can Sol Mare Tuna in oil Washed Baby spinach ( i buy th prewashed coles stuff because its easy) Spanish Onion Lebanese Cucumber Salad Sprouts Baby tomatoes on the vine Low fat feta Almonds (handfull) Extra Virgin Olive Oil & Balsamic vinegar for dressing Throw you baby spinach in a bowl with the sprouts. Chop cucumber and tomatoes and onion, add to salad break or chop the feta, throw it on Tuna on top Crush or just break up the almonds and sprinkle on top Add a small amount of olive oil and balsamic to taste. Enjoy.
