I've never liked having to hit my rep count on all 3 sets because it ends up becoming a problem with endurance. I will often work off the first set or 2 (of 3) or the final set, depending on whether it's more of a pure strength type exercise (deadlifts) or something where I really like to feel...

For me, barbell squatting is very much a full lower body exercise, which seems to really hit the glutes/hams. If I want to hit the quads properly I need single-leg leg press and leg extensions.
