Soak your chicken breasts in low fat-buttermilk (enough to cover the chicken) overnight.
Next in a Ziploc bag put about 2 cups of oatmeal; 1-2 tsp of garlic powder, onion powder, paprika, pepper, dried thyme, and salt; whatever your family likes for spices.
Spray Pam on a baking sheet and place chicken on the pan and then bake for about 30-35 minutes @ 200C, depending on your oven.
 
Do you take the chicken out of the milk and then add the oats to coat the chicken or simply throw the oats in with the chicken+milk?
 
Nope, take it out of the milk and then coat with the oats, kinda like you're doing shake-n-bake
