- 4 x 150g lean chicken breast fillets
- 2 teaspoon extra virgin olive oil
- olive oil spray
- 500g good quality low fat tomato based pasta sauce e.g. Barilla Napolentana, Basiclico or Arrabiata
- 1/2 cup (75g) sliced balck olives
- 1/2 cup basil leaves, shredded, plus 10 whole extra leaves
- 400g can artichoke hearts in brine, drained and finely sliced
- 120g low fat fresh ricotta cheese
- 1/2 cup (60g) grated extra light mozzarella cheese e.g. Perfect cheese mozzarella light
- 4 thin slices (50g) prosciutto, trimmed of all visible fat and halved lengthways to give 8 long slices
- Serve with pumpkin and potato mash and steamed greens such as beans, broccoli and asparagus
Step 1
Slice each chicken breast fillet in a cross-section to make 8 very thin breast fillets. Using a rolling pin flatten each fillet between 2 pieces of baking paper to form a schnitzel style fillet around 5mm thick. Spray with a little olive oil spray and season lightly if desired.
Step 2
Spray a large non-stick fry pan with little olive oil and add 2 teaspoons of oil and swirl to coat evenly. Heat pan over a medium -high heat. In batches, pan fry chicken fillets for 2-3 minutes each side until golden brown and just cooked through.
Step 3
Preheat grill on high.Meanwhile place pasta sauce in a medium sized saucepan and warm over a low heat fo3-4 minutes. Stri in olives, and shredded basil then pour 3/4 of the sauce mix to evenly cover a shallow 2-3 litre baking dish.
Step 4
Place the chicken fillets just slightly overlapping on top of the sauce and top fillets with artichokes, remaining sauce, basil leaves, and then crumble over ricotta cheese. Finish by scattering grated cheese evenly ovber the top of fillets and place a proscuitto slice over each.
Step 5
Under the hot grill, cook for 6-8 minutes until sauce is bubbling cheese has browned and prosciutto is golden and crisp. Be sure to watch as grills can vary in speed of cooking depending on their power.
