Sweet & Sour Chicken
Ingredients:
1/2 cup apricot jam
3 Tbsp. chilli sauce
2 Tbsp. Dijon mustand
4 (6oz) chicken breasts (boneless, skinless) cut into strips
1 red bell pepper, sliced
Nonstick cooking spray
START: In a small bowl combine jam, chilli sause and mustard.
PREPARE: Coat large nonstick skillet with cooking spray and heat over medium-high heat.
COOK: Add chicken and saute for 2-3 minutes or until lightly browned. Add red bell pepper and saute two more mintues. Add apricot jam mixture and cook for an additional minute or until sauce is heated through.
SERVE: Eat with a side of brown rice.
