The other complete stupidity are methods of increasing "speed of movement" whereby the trainee thinks he'll improve this by reducing the weight he normally uses and moving the bar faster
 
I'd go with nutrition as it would enhance your current knowledge and qualifications. Regardless of your school having an average reputation, you really learn the ins and outs of being an awesome PT from the job itself. I personally wouldn't bother with the diploma in fitness unless it's purely for personal development.
