another epic flex bowl for dessert .. blackberry cheesecake rice pudding (yes really) topped with banana, raspberries, a scoop of banana peanut parfait, and some cookie dough crumble

I got invited to a Chobani workshop tonight held at the Sofitel in Melbourne.

We got to hang out with the Executive Chef there and also prepare our entree and mains (dessert was made ahead).
Every course had Chobani.

it was sensational.

I didn't eat the lamb as I hate lamb but it was an impressive dish! Will try the same with turkey as it would work really well.

We had a range of appetisers including spring rolls and tempura prawns with Chobani dips with sweet chilli etc.
Also this .. Cho with asparagus, crispy parmesan and microherbs

Kingfish sashimi with avocado lime cream, smoked Chobani and lime coriander Chobani mousse, crispy capers and microherbs.

Chobani spiced lamb backstraps with capsicum, zucchini, mint oil, and pomegranate molasses dressing.

Chocolate fondant with Chobani vanilla ice cream and raspberry coulis. Delightful. The centre of the fondant was gooey and perfect.
A well executed but simple dessert.

Deep fryer made me the man I am today, still trying to undo the good work it did many years ago.

People I lived with when I was 17 deep fried everything every night.
 
Just going to leave this here for the BACON lovers among you.

Fantastic recipe for Spicy Beer and Maple Candied Bacon from Billy Law

10 rashers of streaky bacon, cut in half (about 12cm) if is too long
½ cup brown sugar
¼ cup maple syrup
¼ cup beer
½ tsp cayenne pepper

Preheat oven to 200C/400F.

Mix brown sugar, maple syrup, beer and cayenne pepper in a jug, stir until sugar has completely dissolved into thick syrup.

Line baking sheet with aluminium foil, then place a wire rack on top. Bake in oven for 10 minutes. Remove from oven, brush bacon with the syrup on both sides. Back in the oven and cook for a further 10 minutes. Repeat the process few more times until the bacon is crispy and browned.
Remove from oven and cool on wire rack to harden.
Munch on!

I remeber making sauerkraut in German class. I ate all my friends portions because they didn't like it. Gave me the biggest belly ache!
 
Thanks :) top 2 were at a restaurant though. Sakana sushi in Mooloolaba for the best sushi in the area if anyone is interested.
