Mini Lime and Ginger Cheesecakes. Made with almond meal base, ricotta filling, and berry compote (which I had to add some cheeky gelatin to so it won't dribble all the way down the sides lol). Some grated mandarin on top for dat dere ba-ZING-a.

Had pasta for the first time in ages (yeah I know, i keep failing at being Italian lol)
Aglio, olio and pepperoncino (with my own red savinas!) and a nice shiraz for lunch with mum.

^ LOve it!! Is pea protein the secret to getting them fluffy like marshmallows? Mine can get crispy (lol) and tough if I don't get the ratios just right.
